Storage goes higher on the 11 Pro, up to 512GB against 256GB, and the 11 Pro has the bigger screen, 5.8" against 5.4". The 12 Mini is worth the extra if the updates matter to you, but the 11 Pro is a good buy if the price has dropped.
If you'd rather pay up front, the 12 Mini is the cheaper buy at £130 SIM-free.
